I actually just made this yesterday. I had one of those "oh, my gosh I'm craving pumpkin pie so bad and the store bought ones are forbidden" kind of moments. It really was sad...running to the store in the morning, and making it in late afternoon after a busy day. It was so good!!!

I do have my doubts about that knife coming out clean though. That statement was in the original recipe. Maybe that's dependant on what you use for egg replacer. I used the oil/water/baking powder...cooked for specified time...knife NOT clean...still set.

If you're watching your Gluten too, ground up Gluten Free GInger Snaps instead of graham crackers make a great base for Pumpkin Pie or Pumpkin Cheesecake. That would make it Gluten, Caesin (Milk), egg & p/n free . . . You gotta figure that would be 0 weight watcher points too, right?!

I made your pumpkin pie recipe, and it was a hit. I used a commercial crust (Safeway brand), but it would certainly work with homemade (if I made the effort!).
The 1/2 cup of rice milk seemed just right. I added vanilla b/c we like it, and used about a tsp. of pumpkin pie spice instead of the individual spices.

Glad to hear it! Does Safeway have fresh crusts? I've never seen them! I don't buy baking at Safeway cause everything has a "produced in a facilty with . . ." so I've moved all of my baking purchases to the little IGA near me & Kub Bakery. Last time I checked out "Tenderflake" frozen crusts they had a may contain egg warning. I don't make very good pie crusts so I tend to do crumb crusts instead.

It was safe for dd who is allergic to egg, dairy, peanut and tree nuts.
I will try to post the ingredients as I couldn't find them on the website.
I wish companies would post their ingredients on ther website but I suppose it would be hard to keep updated.

I was trying to figure out what to do with my left over pumpkin (my can was 3 cups...I needed 2 for the recipe I posted here). I made a half batch of filling and microwaved it in a bowl on high for 15 minutes, stirring half way through and at the end. It cooked well and made a nice crustless pumpkin pie desert. I topped it with nutriwhip. I thought it would be nice in fancy desert cups...perhaps layered with graham crumbs or oreo crumbs...or no crumbs for the wheat allergic.

I bought their frozen crust, which does have soybean oil in it. It was the lesser evil to the Tenderflake, which contains dairy. Ds isn't big on desserts, but at least it was a safe one to have around him (i.e., no eggs).

I'll have to look for that Pillsbury product. Though I think most of their stuff has soy.

I like the sounds of your pumpkin pie dessert! You get the taste without the crust. Good thinking. I have a whole can in the pantry... it's calling me to use it! ; )

I'll have to look into this - my daughter uses a can of white decorating icing sometimes in lieu of whipped cream. We tried a soy whip cream from the health food store but the opening won't work after using it the first time - I've tried a few different times and it always ends up not working so thanks for the tip on nutriwhip - I'll look for it.

I make this recipe, and my family loves it! It is really close to the real thing.

1 can (16 oz) pumpkin
3/4 c sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp ground cloves
3 Tbsp cornstarch
1 pkg (10-12 oz) silken tofu
1 unbaked pie shell (I use Pillsbury- or did until we got a wheat allergy!)

Preheat oven to 425. Beat pumpkin and sugar together. Add salt and spices. Process tofu in blender until smooth, add cornstarch to tofu and process to combine. Add tofu mixture to pumpkin and combine. Pour into unbaked pie shell and bake 15 minutes. Lower heat to 350 and bake 40 minutes more. Cool and serve. Store in fridge. (You can alter the spices to match that of the pumpkin pie recipe you like best.)
