My friend Audra told me about this recipe, originally with PB, and I used it with SunButter... IT IS AWESOME!!! Even my kids like it - and they don't really like SunButter!

I'm sure soynut butter would also work (I'm just not a fan of soynut butter).

Audra's SunButter Chocolate Squares

1/4 cup (or 1 stick) of safe margarine
1 cup icing sugar
1 cup SunButter
3 cups Rice Krispies
---------------------------------------------------
3/4 to 1 cup chocolate chips (it really depends on how much you like chocolate - the original recipe called for a small package, but I found that was too much)
1/4 cup SunButter

1. Prepare 8x8 pan with Pam or similar.
2. Melt margarine in large pot on stove.
3. Add icing sugar and SunButter and stir to blend.
4. Take off stove when it's all well mixed.
5. Add Rice Krispies and mix.
6. Put into pan and press down firmly.
7. Put in fridge to cool.
8. In the meantime, melt the chocolate chips plus 1/4 cup SunButter, either on the stove on in the microwave (m-wave is easier I find).
9. When chocolate mixture is melted, pour over SunButter squares and smoothe out.
10. Put in fridge for a little bit to speed up the chocolate's hardening process.

Cut into very small squares - they're quite rich.

Note: A friend of mine was going to try cornflakes - I bet that would work too.

K.
