Last night I was brave and made my very own honey, whole-wheat bagels! It wasn't as difficult as I thought it would be - actually it was quite fun! The hilight was my two boys' response - "Awesome bagels mom!" If anyone wants the recipe, I'll post it.

I made bagels once. (Plain white flour.) They weren't that difficult, just time consuming. I was quite surprised at how much my family all enjoyed them -- and they can all eat bought bagels. I recently found the recipe and I think it's about time to make them again.

Here's my recipe. I have no idea where I got it from -- probably the internet.

2 tsp. Kosher salt
2 tbls. granulated sugar
1 1/8 cup water
3 cups bread flour (I used regular flour)
1 tbls. yeast

Put all ingredients in the bread machine and set it to dough. Let it knead and rise once, then remove the dough and turn the machine off -- bagels should not become to airy.

Divide the dough into 8 to 10 balls. Punch your thumbs through each ball, forming the circle.

Put bagels on a greased cookie sheet. Cover them and let rise in a warm, draft-free place for 15-30 min.

Preheat oven to 550 d F.

Bring 2 quarts water to a hard boil in a large, nonaluminum pot. Drop the bagels in, a couple at a time, and let them boil for about 30 seconds, or until they rise to the top. Remove with a slotted spoon and drain well on paper towels.

Return the bagels to the greased cookie sheet and put them in oven for 8 - 10 min, or until they are lightly browned.

*********

I just made them plain, but the instructions I have also say that about 10 min. before th ekeading stops you can add 1/2 cup raisins and 2 tsp cinnamon. Or, dried onion flakes, or dried garlic.

Just before baking you can brush bagels with water or egg, then put a topping of onion flakes.

Thanks for the recipe Anna Marie! I'm going to try these (when I have a few hours to devote to bagel-making!)
