I've been meaning to post this recipe for a while. I searched high and low on the web for a butter chicken recipe that was easy, tasty, and safe for us. This recipe is amazing.

Butter Chicken

1 lb. chicken fillets, cubed
1 med. onion, sliced
4 tbsp. buttermilk (I have also used sour cream diluted with milk)
1 tsp. fresh ground ginger
1 tsp. fresh ground garlic
1 tsp. fine salt
2 tsp. fine red chilli powder
2 tsp. powdered cumin corriander blend
1/2 tsp. tumeric powder
1 can tomato paste (small)
1 oz. butter for sauteing
1 cup fresh cream
Chopped corrainder leaves for garnishing (optional)

Directions:
Mix buttermilk, ginger, garlic and spices together. Add tomato paste. Add washed and cubed chicken to marinade; allow to marinate for 30 minutes. While chicken is marinating, saute the onions in the butter, on medium heat. Add marinated chicken, cook for 15 minutes on medium-low heat. Remove from heat, add fresh cream and stir well. Return to heat, cook for 5 minutes. Garnish with chopped corriander leaves. Serve immediately.

I'm so glad you liked it -- it's definitely a staple in our house. My son really enjoys it too! I also meant to add that we serve it over a bed of basmati rice and the original recipe says that the same recipe can be used for prawns instead of chicken if you like.

Ethansmom, I think you just made my hubby a happy man. :) :)

He eats in a lot of restaurants (goes with the job) and he was going on and on about the Butter Chicken he had recently. We did find it (pa safe) but it didn't look to appetizing to me. He said it wasn't very good.

So, I'm showing him your recipe to see if it looks like what he wants.
