I found this recipe online this morning and I thought it looked really interesting. I think it could also easily be converted into dairy free by substituting soy milk and safe margarine. I can't wait to try it.

I also wanted to share the vanilla cake recipe that I've been using lately with great success.

1 cup sugar
1/2 cup safe margarine or butter
3 cups unbleached flour
1 T. baking powder
1 t. kosher or sea salt
2 cups milk or other non-dairy milk of choice
1 t. vanilla
1/2 t. almond extract


Butter & flour a 9x13-inch pan and set aside. Using an electric mixer or in a large bowl with a hand held mixer, place the sugar and butter, and cream together until light and fluffy. In another bowl, sift together the flour, baking powder and salt. Add dry ingredients into the creamed mixture, alternating with the milk, and continuing to beat the mixture well between each addition. Add the vanilla and almond extract and beat the mixture an additional 2 minutes at medium speed. Pour the batter into the prepared pan. Bake at 350 degrees for 30 minutes or until an inserted toothpick comes out clean.

I'm off to frost 60 vanilla cupcakes for the last day of school so that both of my sons will have a safe treat to share with their classes :) . Happy summer holidays to everyone!
