This is my dh's favourite! It's kind of a spice cake and a bit dense but good for picnics and great with vanilla "ice cream" or canned peaches.
It comes from The Food Allergy News Cookbook and is dairy, egg, peanut, soy and nut free.

2 1/2 cups flour
2 tsp baking soda
1/2 tsp salt
1 tbsp ground ginger
1/2 cup shortening
1/4 cup brown sugar, firmly packed
3 tbsp water, 3 tbsp oil, 2 tsp baking powder mixed together
1 cup molasses
1 cup boiling water

Preheat oven to 375F. Grease and flour an 8" square pan. Set aside.
In a medium bowl, stir together flour, baking soda, salt and ginger. Set aside.
In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in water,oil and baking powder mixture. Add molasses. Blend well. Stir in water. Quickly add the flour mixture and stir until batter is smooth.
Spread batter into prepared pan. Bake 35-40 minutes or until cake tester inserted in center comes out clean. May be served warm or cold.

thank you ... my son is allergict to eggs and intollerant to milk and he loves gingerbread. I can't wait to try this for him

I love this recipe! I tend to bake it at 350 because it burns easily but it's very tasty.

I saw a Nordic bakeware pan that looked like little houses (village) and thought it would make an alternative to Gingerbread Houses...
