Talking Allergies

Hello,

I am new to these boards. I have a son who is allergic to peanuts and eggs. I was wondering if anyone has a meatloaf recipe that doesn't contain eggs.

I have made a meatloaf similar to the one I've pasted below (don't have my own recipe handy). Hope it helps!

1 1/2 pounds ground beef
1/4 cup potato raw, grated
1/4 cup onion chopped
1/4 cup carrot grated
3/4 teaspoon salt
1 dash black pepper
1/2 cup broth
1 cup vegetables chopped

Mix all ingredients. Bake at 350 degrees F for 1 hour.

I will try it out.

I make one from ground beef and a package of stuffing mix. I mix them together and add enough water to make it stick. I also learned to cook it in muffin tins so it only takes 30 minutes. Quick, easy and yummy.

My son is allergic to eggs so to "bind" the meat I puree (in a blender) 1 medium onion and a red pepeer, add some parsley and a bit of water. I add this puree to my meat, salt, pepper, garlic powder and corn flake crumbs. Tastes really nice! I know some people who add zucchini to their meatloaf.

My son has egg allergy too - when I make meatloaf I don't include bread crumbs or anything of that nature, and I don't include the egg, but usually will put in some salsa or ketchup or something to give us a bit more liquid. Maybe a bit of oil too. Other than that - garlic, onion, spices - it's amazing how many things you can do without the egg. It is hard when you're first figuring it out but it can also become a challenge - every time I "conquer" a new recipe, I think of my friend telling me "you kick some serious egg-allergy butt!" That really made me feel good and powerful, something we don't feel enough of in allergy land.

We use lean ground beef so I usually whiz up an onion, carrot and celery (it's my chance to increase the veggie factor while instilling some moisture and flavour) or I might add a couple of tablespoonfuls of a safe italian salad dressing to the meat mixture.

Thank you all for your responses. I will definitly be trying some of these recipes.

I can't use egg either, so for meatloaf, I just use ground beef, add in a bunch of diced veggies - onion, pepper, carrots, garlic, zucchini, then add some tomato sauce and stir it all up. It turns out well, and my family likes it.

I have never made meatloaf because I haven't (until now) been able to find a recipe that is free of egg, potatoes, tomatoes, and dairy. I'm going to try and make some meatloaf for my family and see how they like it. Thanks.
