I found this recipe in the local newspaper by a columnist Barb Holland. She suggested replacing the apricots and raisins with figs, dates and dried cranberrues, cherries or blueberries.

I tried it with dried apples instead of apricots. I omitted the orange peel and added 1/2 tsp (2 ml) cinnamon. The honey was a little over powering with the dried aples but I think it would be good with the apricots. I'll try it that way next time.

Chewy Dried Fruit Oatmeal Bars

1 1/2 (375 ml) cups Rice Krispies (or Corn Flakes)
1 cup (250 ml) quick cooking oatmeal (not instant)
1/2 cup (125 ml) diced dried apricots (I used dried apples)
1/2 cup (125 ml) raisins
2 tbsp (30 ml) butter or margarine
1/4 cup (60 ml) brown sugar
1/4 cup (60 ml) liquid honey
1 tsp (5 ml) grated orange peel
1/2 tsp (2 ml) vanilla

Line a 9-inch (23 cm) square baking pan with parchment paper (hang the ends over to make it easy to remove). Lightly oil or spray ends that do not have paper.

In a large bowl , combine cereal, oats, apricots and raisins.

In a small saucepan, combine butter, brown sugar and honey. Over medium heat, bring to a bi, stirring frequently. Boil 1 minute, stirring often. Remove from heat and stir in orange peel and vanilla.

Pour over cereal mixture and stir well to thoroughly combine. Press evenly and firmly into prepared pan. Refridgerate to firm up.
