I ran across this in a cook book I purchased and I thought I would pass it along for those holiday recipes.

1/4 cup flax seed
grind it in a coffee grinder

bring 1 1/2 cup water to a boil add flax stir until it becomes the consistancy of raw egg.

2 tbsp = 1 egg

have a great holiday season cooking.

I've used this in the past.. It provide great binding, but not such good leavening. I suggest a bit of baking powder in addition to this for cakes, cookies, muffins, etc.

I use this all the time. My little boy is so happy he can eat cakes and cupcakes just like every body else!!! :D

I've never been able to find flax seeds that's not cross contaminated with peanuts.

I have found one brand of nut safe flax seed. Nature's Path, Organic Flaxplus, ingredients read whole brown flaxseeds - produced in a facility that contains soy.
The package says this product is produced by Nature's Path Foods, INC., www.naturespath.com

I am using flax as an egg replacer for the first time today. Fingers crossed.
