Last winter my daughter tried split pea soup for the frist time and just before I gave her the Epi-Pen (legumes have since been added to her list of allergies) she said she really like the soup.

So tonight I made Almost Split Pea Soup

1 meaty ham bone
1 large onion, chopped
4-5 stalks celery, chopped
3 large carrots, chopped
1 large parsnip, chopped
2 small sweet potatos, chopped
2 bay leaves
6-8 cups water
1/4 cup barley
1/2 cup rice (I used sticky rice)

Add all ingredients except barley andrice to a pot. Bring to a boil, cover and simmer 1 hour. Add the barley and continue to simmer, covered 30 minutes. Add the rice, cover and simmer 25 minutes more.

Remove from heat. Remove the ham and any meat that has fallen off, reserve. Remove and discard the bay leaves. Puree the mixture in batches until smooth. Remove the meat from the bone and roughly chop. Sprinkle the meat on top of the soup and serve.

The carrots and sweet potato gave a soft orange colour that was close enough to the split pea soup we made last year.

I made your soup tonight (minus the barley, I just added more rice). Everyone liked it, someone commented that it tasted better than pea soup. I will definately make it again.
