This is a recipe that my mom has made for years, and it's really tasty and easy to make. Kids might not like it, but then again... who knows? Maybe others aren't as picky as mine. :)

3 cups V-8 juice
1 beef or vegetable bouillion cube [optional]
2 tomatoes, finely chopped and seeded
1/2 cup chopped cucumber
1/2 cup chopped onion
1/2 cup chopped green pepper
1 clove garlic crushed
2 Tbsp red wine vinegar
1/2 tsp Worcestershire sauce [optional]
Dash of Tabasco, salt and pepper
chopped chives (optional)

1. Heat 1 cup of V-8 juice and dissolve bouillion cube in it. [I don't think I've ever done this - I just used the plain V-8 ).
2. Add remaining juice and ingredients.
3. Blend until desired consistency - we like it somewhat chunky. [I usually just chopped the veggies fairly fine and leave it like that.)
4. Cool until ice cold.

Makes 8 servings.

Husband: no allergies
Me: allergies to some tree that flowers in May
Cat: allergic to beef, pork and lamb

That's so funny that you bumped this Susan! I ate two different kinds of gazpacho in the past week, and realized that I hadn't made this in ages. I plan on going to the market this weekend to get the necessary veggies, and making a big batch. I think I'm the only one in the family that likes it, but too bad. More for me!
