 Post subject: milk free mac-n-cheese

I've really been craving mac-n-cheese lately. Especially the kind that is ready in a hurry!

Here is what I have come up with:

Start with this: http://www.vegancooking.com/recipes/cre ... osauce.htm But omit the ham. Also omit the parsley if you or your kids will be turned off from green flecks in your mac-n-cheese.

Freeze in 1 cup containers...I use small ziploc storage containers.

Reheat by placing 1/4 cup of water in the bottom of a sauce pan. Add 1 cup of frozen alfredo sauce. Heat over low heat until completely unthawed. Add four slices of tofutti cheese slices (the orange ones) and continue to heat until melted. Pour over macaroni and serve immediately.

The store I buy the EARTH ISLAND MELTABLE CHEESE at just got in cheddar flavor. I used it instead of the tofutti slices and it is a big improvement.

So add a 3/4 inch slice cut into cubes to the 1 cup of alfredo sauce and 1/4 cup of water.

I recommend trying it this way. It is really good.
