Merry Christmas and Happy Holidays - one and all.

I'll be cooking up a storm on the 25th: turkey dinner with safe dressing for most of us.

Our daughter in her 20s is now vegan. Since she won't be having turkey I'm making an eggplant appetizer, tons of roast vegetables in herbs, a sweet potato dish and Chef Simon's Pastry-free Vegetable Pot Pie.

As I'm the one used to needing to pipe up about food restrictions, I rather enjoy the challenge of accommodating someone else's food needs.
Just wish I had a six-burner stove.

What's everyone else making?

I'll be preparing a turkey feast for 13 people at my mother-in-law's tiny apartment. It has to be ready for 12:00 noon so I might see Santa when I'm up putting the turkey in the oven!

Most will be prepared in advance and simply cooked or heated through at her place. I want to enjoy Christmas!

Today we're making 2 types of ice cream (vanilla and one with crushed up candy canes mixed in), Spritz cookies, Gingerbread cookies, Reindeer cookies, apple pie, pumpkin pie tarts and buttertarts. If we have time, I hope to also make a 4th batch of Caramel corn and some Ginger snaps.

Oh yeah, I'll have to nip out to pick up my husbands gift (it just came in), refill some prescriptions and think of something for him to get his mother as he has put it off too long again. :roll: (I just buy something I want and have him wrap it)

O.K. Christmas better get here soon or I won't have any cookies left in the freezer for any one else. :oops: :oops:
Have spent the last week making Sugar cookies, ginger snap cookies, rollo cookies, Honey cereal crunchie cookies, and butter tarts. I love cookies :D Even when they are frozen. :happydance

Now it is time to make the rest of the meal. Will make elsies mashed potatoes tomorrow they can be heated at the last moment. Then on x mas day I will make sweet potato pie the kids love that one. My sister in law will take care of the turkey :huggy Nice to have help with dinner. That would be great everyday. :goodidea

Love all the smilies :rofl This makes me laugh every time.
