D's Birthday party is tomorrow...she wants an ice cream cake. Since she has alergies to dairy, eggs, peanuts and tree nuts, it's a make your own cake.

I made 4 batches of ice cream, layered 1/3 ice cream, layer of graham crackers, layer of caramel sauce, the rest of the ice cream and drizzled it with caramel sauce to finish. I'll try to get a picture and let you know how it turns out.

Mmm, it was yummy! I need to tweak the caramel sauce recipe because it was too hard but then I didn't really follow a recipe (couldn't find it whenI wanted it)

Loblaws had a big square spring form cake pan on sale ($8.99) so I got that.
I used 5 batches of ice cream (did I say big pan?). I put 1/3 of the ice cream in the pan, a single layer of graham crackers, 1 1/2 cups caramel sauce (remember...big pan), the rest of the ice cream and drizzled the last of the caramel on top. Froze it in the chest freezer over night and used a knife dipped in hot water to cut it.

Next time I will place it in the kitchen freezer on the morning of party to bring it up in temperature a bit.

The cake sounds delicious. I'd love the carmael recipe when you find it.
In case you want a different recipe:
I've made ice cream cake in the past and I used tofutti ice cream sandwiches for the bottom. I put a layer of chocolate icecream on top. In the middle I made hot fudge sauce and I put crushed oreos in it. On top of the hot fudge layer I put the vanilla ice cream. You can top it with nutriwhip or with hot fudge. It was really good.
