Hi
Wanted to know if anyone has come across any research about cooking extracts and peanut allergy sufferers. Alot of cookie recipes call for almond extract and Im concerned with a peanut allergy (ana reaction). Is there a difference between using pure extract and an artificial one??

TIA
H.

hi, most almond extracts don't contain almonds---instead it is made from peach pits. i would call to double check though. and then there's the question---do people who are allergic to tree nuts need to worry about peach pits? i don't eat anything with almond extract anymore, but i used to eat cookies with almond extract when i was a kid. i actually thought that i probably wasn't allergic to almonds because i could have almond extract but that would be a major misconception---i never did eat almonds, but i used a handcream with almond oil in it. i wonder if that's why the almond skin test was one of the ones i reacted to the most (one can be sensitized through the skin).
