Talking Allergies

This may sound like a silly question but I'm not very familiar with baking or with egg allergy. Can I make a cake without eggs?
My son is peanut/nut allergic, his friend is egg-allergic, another friend is very sensitive to chocolate, I want to make a cake that all can enjoy.

Baking without eggs is actually quite easy!

In many cases you can replace each egg with:
1 1/2 tablespoons oil
1 1/2 tablespoons water
1 teaspoon baking powder
Mix together and add to recipe when an egg is called for.

Chocolate Cake
(egg and milk free)

1 1/2 cups flour
1 cup sugar
1/2 tsp salt
1 tsp baking soda
3 Tbsp cocoa powder

1 tsp vanilla
1 Tbsp vinegar
5 Tbsp oil
1 cup cold water

Preheat oven to 350. Sift dry ingred. into mixing bowl. Add vanilla, vinegar, oil and water together and mix with dry ingredients; pour into greased (parchment paper works well) 9 inch square pan. Bake for 25 to 30 minutes.

I usually double this and put in a rectangular baking pan. Enjoy!

A variation I have been using depending on the crowd is replacing the water with coffee, or a combination of coffee and kaluha, or baileys.

I didn't mean to make you feel bad - just to point out that it wouldn't be safe for anyone with a milk allergy. (At least, I'm pretty sure Bailey's has cream in it...)

It is just an eye opener for me. Because my son is only two I didn't even think to read the ingredients in a bottle of liquor. I am typically a very cautious label reader. As he grows up I guess there are new things to consider.

You can imagine my own surprise when I was at friends' and being treated to a gin and tonic. I, of course, couldn't help reading the ingredients (even though I wasn't serving G&Ts to my kids) and discovered that Bombay Sapphire gin contains ALMONDS!
