Betty Crocker Super Moist cake mix can be used to make an egg-free cake/cupcakes; simply substitute each egg with 1 tsp baking powder, 1.5 tablespoons oil and 1.5 tablespoons water. I very recently discovered this, and my son has now had cake for the first time in his life! We don't eat a lot of sweets in our house, but it's nice to be able to make him a real birthday cake... prior to this, I would make him a Rice Krispie square cake to feed 25 people. That's a lot of Rice Krispies!

Awww, that is so nice to hear, he must have LOVED it!! We don't have an egg allergy, but I just had to say that I'm happy for you that you found a great alternative. I know what its like to score something that they've never had before! :D

Julie, you should also try the Wacky Cake recipe in the recipe section here. It is a chocolate cake that is delicious. All the kids love it. My son is allergic to eggs, milk and peanuts so I know it can be a challenge to do baking. He is 8 now so I have acculmulated a few recipes that we all enjoy. It is much easier to subsitute the milk than it is the egg. I find thing are more crumbly when I subsitue the egg but not always.
I have found a eggless cinnamon roll recipes that the kids love. Maybe I will try to post it in the recipe section if you are interested.

Thanks Bev! I will try the Wacky cake recipe now that you've reminded me of it. And yes, I would be interested in the eggless cinnamon bun recipe - thanks!
