Food allergies
Kuenning said the school averages about five students per year with food allergies, as well as those with diabetes who require certain foods or a lack thereof.
“There is supposed to be a doctor’s statement yearly on file,” she explained when asked how to cater to those students.
Asked if a separate meal was offered to those students, Kuenning said they are free to make choices from the “offer or serve” rule, which mandates that schools offer three food groups and serve five food groups per meal.
“We base what we serve kids on the response and numbers, but we still get in the food groups,” she explained.
“So few people realize the criteria we need to meet.”
Nurse Paisley said, “The kitchen is supposed to supply the child with a meal if he can’t eat what’s offered,” answering the question concerning an alternate meal for those who can’t eat what’s offered that day.
Her grandson is Krayton Paisley, 3, son of CCS teacher Jacci and husband Garret. Their son will be facing food choices in the near future. Krayton is allergic to peanuts, and several weeks ago was also diagnosed as allergic to eggs and tomatoes.
