Talking Allergies

Has anyone ever looked into whether the bread crumbs in Shake n Bake contain milk or not? It's not listed on the ingredients, but it just says "bread crumbs (contains wheat flour)" and doesn't specify what is actually in the bread crumbs. I've searched the Kraft Canada website but can't find any info.

I don't know about Shake n Bake, because I make my own from my mom's homemade recipe, which is easy to adapt to your specific allergies. You can switch all or part of the bread crumbs for wheat germ, wheat bran, ground flax etc. You can also make your own bread crumbs from safe bread. Here is the recipe for you:

Nann's Baked Chicken

1 cup fine dry bread crumbs
1 tblsp salt
2 tblsp parsley flakes
1/2 tsp pepper
1/2 tsp oregano
1/4 tsp garlic powder
1/2 tsp marjoram
1/2 tsp onion salt
1/2 tsp celery salt
1/2 tsp rosemary
1/2 tsp thyme
1 tsp paprika

Combine all in an airtight jar. Store in fridge if using flax or wheat germ etc. that requires refrigeration. When ready to use, place small amount in bag and toss chicken or pork chops until coated. Place on wire rack on top of cookie tray. Cook at 400 F for 45 minutes for bone-in meat, 30 minutes for boneless.

I use Cornflake crumbs. The chicken comes out really crispy (almost like you fried it).

Dredge the chicken in flour
Then dip it in a mixture of soymilk and olive oil
Then coat it with the cornflake crumbs

Put some oil on parchment paper. Place chicken on top.
Bake, turn chicken

I buy the Cornflake crumbs - they can be found at walmart in the bread section.
When I've run out and desparate - I've made my own by crushing cornflakes.

Thanks for posting this recipe. I used it last night and it turned out great. DD liked it and so did DH!

I use cornflake crumbs as well.

coat the chicken in Italian salad dressing (I let it sit in it for a few hours), coat in Cornflake crumbs, bake.

It's good hot, but I usually prepare this in advance to eat as a cold meal with salads.
