Thanks Panacea. I'm glad you liked it. It's my own twist on a recipe I found in a low fat pasta cookbook a long time ago. I'm always on the lookout for ways to get some extra nutrition into 2 very picky little eaters :D . It's the only way they'll eat avocado.

twinmom -- tried the recipe and really enjoyed it thanks! I don't have a food processor, but I do have one of those small "choppy" machines (kind of like a mini-food processor) and I was able to put all the ingredients in it and make it with no problems. Yummy!

twinmom - we tried your avocado pasta sauce last night and both my DH and I loved it. My DH was especially pleased - he told me he hadn't thought it would taste very good when he first read the recipe.

We tried the trick of putting it on a bed of raw spinach and it worked great. My DH added about 1/8 cup of white wine with the water to make it 1/2 cup. Not sure if it made a huge difference but it was really good overall.

I'm not sure our kids will ever try it, but we'll certainly have it again!

Hi again ...

We made it again tonight and were salivating so much that we devoured a bunch with nachos before adding the water. You'd think we hadn't eaten anything in days :lol: I'm sure we looked like vultures ... We didn't have spinach, so we put some on arugula (and used sun-dried tomatoes in the pesto).

Can't wait to make it again ... and this time, we'll try it with the wine like you did, Karen.
