BEST EVER BANANA CAKE
20 minutes prep
40 minutes baking time
freezing excellent!
preheat oven to 350 , use two 8-inch rounds, a 9x13 pan greased and floured, or muffin tins (lined)

2 cups all purpose flour
1 3/4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/4 cups white sugar
1 cup mashed bananas (2 large)
1/2 cup milk free marg or chrisco
1/2 soy or rice milk + 1 tbsp lemon juice
2 eggs
1 tsp vanilla

Combine flour, baking powder, baking soda and salt in a large mixer bowl. Add sugar, banana, marg/chrisco, milk and lemon juice. Beat at medium speed of electric mixer for 2 mintues. Add eggs and vanilla. Beat at medium speed for 1 minute. Spread batter evenly in prepared pans.
Bake for 35 to 40 minutes for rounds or rectangle, 17-20 minutes for muffins. Cool 10 minutes in pan(s) then remove from pans to cool completely if icing. If not, it tastes the best warm from the oven!

Karen, is that "1/2 cup" soy or rice milk?

Thanks for the recipe. My fussy son likes banana bread and banana cookies - so this sounds like something else he'd like. :)

I FORGOT THE CUP IN THERE. I KNEW I SHOULD HAVE DOUBLE CHECKED IT BUT I'M ALWAYS ON THE RUN WITH TWO LITTLE ONES AT HOME! HOPE YOUR SON LOVES IT AS MUCH AS WE DO. I HAVE BEEN MAKING IT TWICE A WEEK NOW FOR THREE WEEKS, AS SOON AS IT RUNS OUT, I HAVE TO MAKE MORE! MY DAUGHTER AND SON LOVE MORE THAN I DO!

he he... I had to laugh at this... I'm ana to bananas so this recipe really IS to die for!
