I have 2 recipes that I need milk subs for - Bread Machine Soda Bread and scones. One calls for buttermilk and the other for milk. Which would perform better - soy or rice? I've been using soy but these are for a party so I want them to be as good as possible.

Hi again Katesmom,

We only ever use rice milk for baking because my youngest is allergic to soy and dairy and it performs exactly like regular milk in recipes. I've even added lemon juice to it as you would to cow's milk for buttermilk and it does the trick!

We use soy milk for baking and have never had a problem.
I agree with the PP- just add lemon juice or vinegar to make "buttermilk or sour milk".

Thanks - the soda bread's in the machine - I used soy milk plus 1 T lemon juice. It may turn out funny anyway because I wasn't supposed to put the raisins in until later....
