Just wanted to share about a wonderful book I ordered online recently. It's called "Vegan Cupcakes Take Over the World" and has 75 egg and dairy free recipes for cupcakes and icing. Some range from basic vanilla and chocolate, to more specialty like s'mores cupcakes and mint chocolate cupcakes. Lots of variations that sound just AMAZING - I haven't tried it out yet but am very excited to. I know the recipes are good because a friend recommended several. Some of the fancier ones call for nuts, but I will either substitute or just ignore those (nut recipes are in the minority in this book).

My favourite part about this book is it relies mostly on regular ingredients - the odd recipe calls for tofu but other than that just your standard flour, baking powder, sugar, etc. I know many parents on here like birthday recipes so thought I would share! :)

It is a great book. The carrot cake recipe is heaven.

Just got this book last Friday, and have already made 3 of the recipes...golden vanilla with chocolate ganache, cookies and cream and the mint chocolate ones (we gave some away to our neighbors!). They were all delicious!
I can't even say how much I love this book. The ingredients are readily accessible, and the recipes are easy to follow, fun and creative. My sons were actually sitting and reading it, plotting out which cupcakes we are going to make and when.

Two thumbs way up for this one.

I love to hear all the great feedback on the book, it really is wonderful. I still haven't made a recipe, though - I need an occasion! 12 cupcakes for just my boyfriend and I are a bit much! :) Maybe I'll host a Sunday tea...

Yes, we should have probably waited for an occasion too! :lol: But when we saw all of those lovely pictures of cupcakes, we just HAD to make some (a lot!). We gave a bunch away to the neighbours, and I was really encouraged by the fact that they really loved them, and had no idea that they were a vegan offering.

I try to take baking to my sons' school for holidays, so that there is at least one safe treat that they can share with the other kids, and I'm so happy to have a whole new book of recipes and ideas.
