 Post subject: Easy thermos soup recipe

I was playing around with some lunch ideas yesterday, and made a great soup. I was amazed at how filling it was for being so low-calorie! Quick-cooking red lentils add protein and fiber, and grating the vegetables make them increase in volume significantly. This recipe is very adaptable, can be easily doubled, and is safe for most allergies (including dairy, soy, corn, nuts and others) depending on the broth you use...

1/2 can condensed tomato broth (see note for home-made version)
1 carrot
1 parsnip
1/4 cup red lentils
garlic powder, onion powder, herb seasoning to taste (or real garlic and onion)

Pre-Cooking: If you do plan to eat this in a thermos for lunch, it is recommended that you preheat the thermos. Fill it with boiling water before doing anything else, and when the soup is ready, just dump the water out and pour the soup in. In my pre-heated metal thermos, the soup was still steaming at lunchtime.

Note: To make your own home-made tomato broth, combine crushed tomato with half as much milk/rice milk/soy milk or milk replacer of your choosing in a saucepan and gently heat. Season to taste and use about 2 cups (and no water) for this recipe.

TO MAKE THE SOUP:

1) Pour the broth into a soup pot and add the water (if using a condensed soup). Stir well.

2) Peel the carrot and parsnip. Grate them into the broth. Add the lentils, stir well.

3) Bring to a boil, reduce heat and simmer 5 minutes. Pour into a pre-heated thermos and pack for lunch, or simmer a few minutes longer until lentils are tender and enjoy.
