 Post subject: D/E/W free bechamel?

Anyone know a recipe for dairy, egg and wheat free bechamel-type sauce? My daughter can have soy and corn, and I would like to make her things in "cream" type sauce, but I haven't been able to find a good recipe for it... Anyone else has found one?

I have a recipe for a nice sauce that is D/E/W-free that calls for yellow peppers and potato that ends up a bit like a béchamel sauce. Would that do? I remember really liking it when my son and I were avoiding wheat, dairy and egg together.

I will try to find it tonight if it appeals.

Rice Dream (Bechamel) Cream Sauce

4 Tbs. olive oil
1 cup Enriched Original Rice Dream
1 small yellow onion, finely chopped
1/2 cup water or vegetable stock
1 clove garlic, minced
pinch dried dill
6 Tbs. wheat or brown rice flour
1/2 tsp. sea salt
optional splash of white wine or lemon
pinch white pepper

1. In a heavy saucepan, over a low flame, sauté onions and garlic in butter/oil until soft and translucent.
2. Sprinkle in flour and stir frequently for 5 minutes.
3. Slowly add Rice Dream, water/stock and seasonings.
4. Whisk until well blended.
5. Increase heat and allow mixture to come briefly to a boil.
6. Reduce heat to low and simmer for 5 minutes, stirring often.
7. Taste, adjust seasonings and/or sauce thickness by adding more water or flour in small increments.
8. Serve immediately or allow to cool and refrigerate for later use.

Yield: 2 cups

Variations: For a different flavor or texture, add a small amount of chopped fresh spinach, chives, scallions, roasted peppers, 1 Tbs. of capers or a touch of tasted sesame oil.

Note - I have no idea where I got this recipe, but I suspect perhaps the Rice Dream web site! I have not tried it myself... But I just might, given that my youngest is dying to try "macaroni and (DF) cheese".

Sweet Peppers sauce (looks like mac and cheese sauce)

3/4 cup chicken (or you could use meat or fish) bouillon
2 small yellow sweet peppers
1 boiled potato
1/2 cup olive oil
salt

Cook peppers in chicken bouillon until peppers are soft.

With a mixer, mix peppers, chicken bouillon and potato to make an even sauce, then add oil and mix.

Note: This one I have tried, and I really liked it on noodles. My youngest (quite young at the time - maybe 3 or so) didn't really like it.

Onion Sauce

3/4 cup chicken bouillon
1 big onion (in slices)
1 boiled potato
2 tbsp of parsley
2 tbsp of fine chop red onion
1/2 cup olive oil
salt

Cook pieces of onion in chicken bouillon until peppers are soft.

With a mixer mix onion parsley, chicken bouillon and potato to make an even sauce, then add oil and mix. Add salt and chop red onion

Note: I haven't tried this one either, but the source was the same as the Sweet Peppers sauce (a mom on another forum).
