Talking Allergies

My Daughter is allergic to dairy & eggs. We usually have a special Christmas brunch with family on Christmas day. I used to make things like "wifesaver" since it is easy and quick, but since this is the first year with the allergies, I'm struggling with what I can make. Does anybody have any ideas for a special brunch-type breakfast?

I haven't yet tried this myself, but maybe it would work for you. I've entered it here without accounting for the necessary substitutions, since everyone has their preferred methods. : )

===Fruity Baked Oatmeal===

INGREDIENTS

* 3 cups quick-cooking oats
* 1 cup packed brown sugar
* 2 teaspoons baking powder
* 1 teaspoon salt
* 1/2 teaspoon ground cinnamon
* 2 eggs, lightly beaten
* 1 cup fat-free milk
* 1/2 cup butter, melted
* 3/4 cup chopped peeled tart apple
* 1/3 cup chopped fresh or frozen peaches
* 1/3 cup fresh or frozen blueberries
* Additional fat-free milk, optional


DIRECTIONS
In a large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon. Combine the eggs, milk and butter; add to the dry ingredients. Stir in the apple, peaches and blueberries.
Pour into an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted near the centre comes out clean. Cut into squares. Serve with milk if desired. Yield: 9 servings.

We'll be having "Overnight Yeast Pancakes", and sausages (precooked, then just warmed up in the oven that morning).

I've also made them dairy free too by using canola oil for the melted butter, and soy milk instead of regular. I'm going to make a cranberry syrup for the pancakes to make them a little more Christmas-y and special.

We've also done smoked salmon with safe bagels, and all the fixings as our Christmas brunch too.

We have hosted several brunches and our menu included:
muffins, pancakes or waffles, roasted potatoes, fruit salads, ham, bacon, salads
It is not "fancy" brunch food but it is safe.

You could also get the Pita break breakfast pitas (apple and cinnamon, cranberry and orange) and serve them with tofutti soy cream cheese. They are great.

Hmm, we tend to do cinnamon buns, bacon, fruit salad, soy yoghurt and home made muffins.

You could do a search on Vegan recipes (no egs or milk- vegetarians will use both)
I found this recipe but I haven't tried it yet.

I'm sure you could prepare it in advance and bake it in the morning

Sunday Brunch Frittata

1 1/2 cups potatoes, peeled, and diced
1 1/2 T. safflower oil
3/4 cup onion, diced
3/4 cup red pepper, destemmed, deseeded, and diced
3/4 cup zucchini, diced
1 T. garlic, minced
1/3 cup green onion, thinly sliced
1/3 cup Roma tomatoes, deseeded, and diced
1/4 cup freshly chopped parsley
1 lb. firm tofu, crumbled
1/2 cup soy milk, rice milk, or other non-dairy milk of choice
2 T. arrowroot
2 T. nutritional yeast flakes
1 1/2 t. agar-agar flakes
1 t. Dijon mustard
1 t. salt
1/8 t. turmeric
1/8 t. white pepper


In a non-stick skillet, saute the potatoes in the safflower oil for 5 minutes. Add the onion and saute an additional 3 minutes. Add the red pepper, zucchini, and garlic, and saute an additional 3 minutes. Add the green onion, tomato, and parsley, and saute an additional 1 minute to soften them. Remove the skillet from the heat. Lightly oil a 10-inch quiche pan or spring-form pan and set aside. In a food processor, place the remaining ingredients and process for 2 minutes or until it forms a smooth puree. Pour half of the tofu mixture into the prepared quiche pan, then all of the cooked vegetable mixture, and top with the remaining tofu mixture. Using a spoon, slightly swirl the two mixtures together, and then smooth the top. Bake at 375 degrees for 35-45 minutes or until the filling is firm to the touch and dry on the top. Remove the frittata from the oven and allow to cool for 15 minutes before cutting. Serve warm, cold, or at room temperature.

Yield: One 10-inch frittata

We finally tried the overnight yeast pancake recipe, and it was great! Thanks for sharing that one, twinmom. It's going to be a regular in our house now.
