In this report, Chef Ming Tsai gives a dairy-free Greek salad recipe. The chef, who has a child with multiple food allergies, has been an outstanding leader in food services awareness, showing at his own restaurant how you can accommodate those with food allergies with good kitchen practices and a few substitions.

STATEN ISLAND, N.Y. -- As spokesman for the Food Allergy and Anaphylaxis Network (FAAN), a nationwide organization dedicated to making the public aware of food allergies, television Chef Ming Tsai takes his volunteer role very seriously.

Both in his Blue Ginger restaurant in Wellesley, Mass., and on his public television series "Simply Ming," he is concerned that his audience-- whether they have allergies or not -- are well informed. "I often slip in suggestions for making ingredient substitutions to recipes I give on "Simply Ming," said Chef Tsai, speaking of the PBS series that now is in its sixth season, but originated on the Food Network.
