 Post subject: Alternative ingredient

In a recipe that uses a lot of coconut as part of the basis of the dough, what can I use to replace it? My gf wants to do that recipe but the primary ingredient is coconut. She's not sure what she can replace it with.

It might be easier to offer ideas if you could share the recipe, since coconut can be used in different ways.

I've actually been thinking about this. I remember my mom used to use nuts instead of coconut in a few recipes. I know peanuts are out for you - but do you avoid ALL nuts? (I do, even though I've never reacted to tree nuts, I worry to much about cross contam.)

Yes, I'm allergic to tree nuts also, most of them anyway, and like you, I freak out too much about cross contamination to take a chance. So no nuts, peanuts, seed or anything of the sort.

Coconut is generally not considered a tree nut for allergy purposes. It's possible to be allergic to it, but being allergic to tree nuts doesn't mean one is allergic to coconut. If you've never tested positive for coconut, sago, or palm, there's no reason to avoid it.

As far as cross contamination--I find it unlikely due to the milling process necessary for coconuts, but you can just buy a whole coconut and prepare it for whatever purpose you need.

why don't you try rice krispies or special K? The coconut in baking at least is usually just a filler.
