I was digging through my recipe book, planning our Thanksgiving feast, and thought I'd share one of our family's fav fall recipes.
Pumpkin Chocolate Cake

Cream together 1/2 cup of butter or margarine with 1c. brown sugar.
Add 8oz. canned pumpkin, 4 oz. plain yogourt or apple sauce, 2 oz of golden syrup and 1tsp. vanilla. Beat well and set aside.

Mix together the following dry ingred.s:
21/2 c. flour
3tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp all spice
Next alternate beating the dry ingred.s into the pumpkin mixture with 1 can of gingerale (making sure to reserve the last few tablespoons of pop).
Put aside 1/3 of batter. Beat 1/2c. cocoa into other 2/3 batter, along with remaining gingerale.
Put chocolate batter into a buttered, floured bundt pan. Put pumpkin only batter on top, and "marble" the two together.
Bake 350 for 45 min.
We eat this with chocolate frosting or plain, and it's dee-lish. Hope everyone enjoys a happy and SAFE Thanksgiving. :)

Just wondering... by "golden" syrup, do you mean regular maple syrup or corn syrup? Looks good - I think I'll give it a try :)

Corn syrup, but I'm pretty sure you could substitute maple syrup if you wanted to... which could make it work for corn allergies too, I think.

Oh my goodness, this sounds wonderful. I'm going to try it with rice syrup instead of corn syrup.

I have a pumpkin just waiting for me to bake it. :)

Thanks for bumping this Susan. I had posted a few weeks ago, to say thank you for this recipe, but I couldn't find the original thread at the time. So thank you so much Twinmom--this cake was a huge success in our house. Also, I see it only took me three years to get around to making it :oops:
