Talking Allergies

My son loves pudding...but can't have it now because of his dairy allergies. Found this recipe thought I'd share

Butterscotch Pudding

3 T. corn starch
3/4 cups dark brown sugar, packed
1/8 tsp salt
2 1/4 cups unsweetened plain almond milk (but I'm soy or rice or oatmilk would also work)
1 T. dairy free margarine (I use Becel Vegan)
1 t. vanilla

1. Combine starch, sugar and salt in a bowl, transfer into a small pot, pour 1/4 cup of milk alternative and turn heat to medium-low. Mix until the mixture is well dissolved.

2. Add the remaining almond milk, stirring constantly until the mixture thickens, about 5 mins. Remove pan from heat and whisk in the margarine and vanilla. Transfer pudding into individual serving cups and chill for at least 3 hours.

I definitely have to make this for my hubby! He loves pudding, but hates the swelling afterwards... allergy to dairy. He's been avoiding pudding because of it.

Mmm, instant puddings do not work with soy milk (not sure why) but cooked pudding mixes do.
Birds custard powder is egg-free and can be used with soy milk. I don't see why any other milk wouldn't also work.

We recently tried pudding in graham cracker crumb crusts topped with fresh fruit(in tart pans)-yummy!

In order to make it safe for my entire family, my only option is using rice milk... I sure hope it works!

The rice milk should work..I haven't tried it with rice milk. You may have to add a bit more corn starch to thicken it.
