Talking Allergies

We really miss hummus so we are thinking outside the box and going to attempt a pea/lentil/sesame free version.
I am going to try today to make hummus with white kidney beans and sunbutter. I know that many people use peanut butter instead of tahini (sesame paste) SO...then why not use Sunbutter. We were given the go ahead by our allergist this week for all beans (just green beans were allowed before) so I was thinking white kidney beans might be the closest to chick peas. We can always disguise any difference in taste with lots of extra garlic.

If anyone has any other ideas let me know. I'll post how it turns out.

*Contact with our son after we ate hummus was how we discovered our DS's allergy to sesame AND chick pea so we were turned off even thinking of eating it of it for quite a while. Now we are ready to open up to more foods again and yummmmmmmm I do love hummus.

Looking online there are several Italian recipes for white bean hummus. They all look basically identical to our old recipe just substitute the peas for beans.


Made it!!!.............It tasted awesome and we all devoured a container in no time. We found safe tortilla's (Sobey's Compliments brand) and cut them up and baked them to make them crunchy to use as chips. It tastes close enough to regular hummus that if you took it to a party no one would even know the difference.

Yes, I've attempted to make it with soy beans. PC Blue Menu has cans of soy beans but, although they are cooked, they still seem a little too firm...

Here's the recipe we used. I used my old hummus recipe and just substituted the peas for beans and the tahini for Sunbutter.
Susan, could you use some soy beans and then add a bit of tofu to soften it up?


White Kidney Bean Hummus

One can 540ml white kidney beans (drained)
2 large garlic cloves (or more...add to taste)
1/2 tsp. salt
1/4 cup olive oil
1/4 cup water
1/4 cup lemon juice
2 tbsp. Sunbutter (or tahini if you aren't avoiding sesame)

Add all at once into a small food processor and blend until smooth.

I make Sweet Potato Hummus that my daughter can eat (she's only peanut allergic but nearly all tahini says "may contain peanut" and I never thought of sun or soy butter, duh!). You use cooked sweet potato in place of the tahini/sunbutter/peanut butter and use whichever bean you prefer (I've used white kidney beans or chick peas).

To cook the sweet potato, get a smallish one and poke it a few times with a fork. Cook it in the microwave on high for 5 to 7 minutes, or until it's really soft when you poke it with a fork. When it's cool enough to handle you split the skin (watch out for steam!) and scrape the sweet potato into a food processor and proceed with your usual recipe. It's a healthy and lower fat alternative.

Your recipe right above looks great! I'm trying a new recipe tonight with smoked paprika and red pepper flakes, yum!

Great idea with the sweet potatoes Carolyn. The 101 positive thing about having food allergies... we may invent new foods at first due to necessity but we soon discover thinking outside the box can be really yummy (although it might take few bad concoctions along the way to discover a hit..but that's 1/2 the fun).
