It's my birthday!!!! And (lucky me) I get to bake a birthday cake for Sunday when the inlaws are coming over and having a birthday dinner with us.

I would really like more than my usual "whacky cake" that I seem to make all the time.

Must be tree nut, egg and dairy free (10 year old ana to eggs, 5 year old with a very newly diagnosed dairy allergy).

I used to have a recipe for a wonderful chocolate cake, it had different layers to it, and I'm pretty sure it was from good houskeeping, womans world etc but I can't find it and have had no luck with google. It is a dairy free cake and I can easily adapt the ingredients to make it egg free as well.

Do you have a great cake recipe you can share? Eggs are really no big deal for me to replace, but I"m struggling with the dairy only because I'm learning.

Here's a link from the recipe section on the A.L. home page. Double Whammy Chocolate Brownies that is dairy free. Look on the site as there are tons of super recipes.

Baking withouit dairy is not that difficult. You can use an alternative milk (soy, rice etc), water or juice to replace the milk in a recipe. You can replace butter with a safe maragine or shortening. Feel free to try any of your old recipes with these simple substitutions, use a search engine to look for "war time" recipes when butter and eggs were in short supply.

I was making a classic in our home and noted that it was pf, tnf, and also egg free. This is a cake/pudding dish that I grew up with and my kids love it aswell. A little difficult to write out but very easy to make. I will try not to make it look too difficult.

Mocha Cake Pudding

In bowl #1
1 C Flour
2 tsp Baking Powder
1/4 tsp Salt
3/4 C White Sugar
Stir with a wisk then set this aside you will use it later.

In bowl #2 (this will be the sauce for the cake)
1/2 C White sugar
1/2 C Brown Sugar
1/4 C Coco
1 T Instant Coffee
Stir with wisk then set this aside you will use this at the end.

In a Med Sauce pan melt on low
1/2 C Butter and 2 heap T Cocoa (don't be shy on the cocoa)
when melted add 1/2 C milk and 1tsp of vanilla.
Remove from burner and with electric mixer dump in bowl #1 (flour mix) blend to mix.

This will be quite thick now I have always used a casserole dish for this must be at least 2L or it will bubble over.

Over the batter sprinkle contents of bowl #2 this will be the sauce of the cake.

Pour 1 and 1/2 cups of boiling water over everything (I use a spoon as a water landing as I pour so the water lands softly in the casserole dish)

Bake in 350 oven for 40 min.

We serve this with whipping cream. You could also use ice cream or just on its own. This is a fantastic chocolate fix if I ever needed one.
