That's one smart kid! No way was she going to eat something that she 'knew' was dangerous. What our kids must think of us... :freak

Congratulations on losing an allergy! I hope you enjoy your new bigger world! :happydance

Daughter: asthma, allergies to egg, milk, peanuts, tree nuts, most legumes (not soy and green beans) & penicillin. Developing hayfever type allergies.
Husband: no allergies
Me: Oral Allergy Syndrome, Allergic to Birch trees

My daughter also refused to eat baked goods with eggs in them last year even when we had the okay from the doctor. After much encouragement, she ate small parts of cupcakes but it was such a battle that I left the whole issue for a while. This spring I decided to sneak in some eggs into her diet knowing that it was safe and that anxiety was holding her back. I really didn't want to deceive her but I knew that this step was important to help her build tolerance.

Anyways I started with one small egg in a double batch of muffins and in a 9x12 cake. She has been fine with both. I have moved up to using large eggs now in the same baked items.

I am wondering what I should try next? Should I use 2 eggs in the muffins and cake or try cookies with one egg? The cookies only bake a short time though. Any advice from past experience would be appreciated!

10 year old son - no allergies
