Here's a new one for the keeper pile. VERY simple to assemble, from mostly store bought ingredients.

2 Boxes Enjoy Life Gingerbread Cookies
1 Box Jell-o Vanilla Instant Pudding
1 Box Jell-o Butterscotch Instant Pudding (I bought low fat as that's all they had)
4 Cups Cold Milk (I substituted 1/4 cup of Appleton Estates Rum)
1/2 Large Can Pumpkin Puree (NOT Pumpkin Pie Filling)
2 Tablespoons Pumpkin Pie Spice (or equivalents of Cinnamon, Ginger, Nutmeg, Cloves)
500ml Whipping Cream
1 Tablespoon Sugar

Blend Jell-o Powders & Milk (rum) for 2 minutes until well blended. Add Pumpkin Puree & spices. Finish mixing until well blended.

In a separate bowl, whip the whipping cream until almost stuff peaks. Add Sugar. Finish whipping until firm.

Depending on how deep your trifle bowl (or other clear glass bowl) is, assemble with:
1/3 Cookies, Crumbled into small (1cm cubes)
1/3 Pumpkin Pudding Mix
1/3 Whipping Cream

Repeat 2 more times.

Let stand in the fridge for 4-5 hours before serving.
Enjoy!
Typo on the rum - 1/4 if you like a bit more flavour & to make it "grown up".

Me: allergies to some tree that flowers in May
Cat: allergic to beef, pork and lamb
