I just found this website and thought I would share a recipe that I make often. Our whole family loves these muffins.

Banana Muffins (egg/dairy/nut free)
Ingredients:
3 large bananas
Egg replacer/water to equal 1 egg
1 tsp. baking soda
1 tbsp. warm soy milk
1 1/2 c. flour
3/4 c. sugar
1/3 c. dairy-free margarine, melted (I use Fleishmann's)
1/2 tsp. salt

Mash bananas. Add sugar and mix together.
Add egg replacer. Add melted margarine.
Mix baking soda with warm soy milk, then add to mixture.
Add flour and salt.
Spoon into greased muffin tin.

Sometimes I add chocolate chips or sprinkle cinnamon and sugar on top of muffins before baking.

Bake at 190 C for 20 minutes.
