A. A food allergy occurs when a person fails to develop a normal tolerance to a certain protein, such as that found in peanut or milk or shellfish. Instead, the immune system identifies this food as harmful and begins to create antibodies to guard against it. These antibodies - called Immunoglobin E or IgE - attach themselves to cells in the body called mast cells and lay in wait. When the person again eats the food he or she has developed an allergy to, the proteins from it attach themselves to the IgE antibodies. This causes the mast cells to explode, releasing histamine and other powerful chemicals into the body. It is these chemicals that cause the symptoms of allergy.

Wow I did not know that shellfish was that common.

The question about whether it is possible to have a 'mild' nut allergy was helpful. I tried to cite this source when trying to convince my father to get his nut allergy checked out. (He has reacted twice, but he's not all that concerned....nothing that a little Benadryl won't take care of, he thinks.)

Kelly, what quiz was that and is it still around? :?: I have anaphylaxis to shellfish and crustaceans. Would love to see that quiz.
