		<description><![CDATA[I actually came across a couple of restaurants in Umbria that had a full gluten-free menus that were certified by the Italian Celiac Association (AIC). My favourite was Ristorante Pegaso which makes absolutely delicious home-made, gluten-free pasta. Its not far from Perugia and is part of a small family-run hotel.
